Way Off Topic: Corn street food in Chicago

So, I was having a nice healthy dinner at the Pumpkin Cafe, right around the corner from my office here in Philadelphia.  Pumpkin Cafe is a mecca for locavores and healthy eating.

One of the dishes I had was a fresh ear of corn cooked just right with really good grated Parmesan cheese sprinkled on it and a couple of lime slices to spritz it with.   Mmm, very tasty and good.

Talking with Lauren, the chef, I discovered that the inspiration was street food she had in Chicago.  Just imagine, you are at a pushcart.  In front of you are 2 squirt bottles, one with mayo and one with Parkay margerine.  The operator takes an ear of corn, squirts the Parkay all over it, then squirts the mayo all over it. Then, the operator sprinkles lots of Parmesan cheese over all.

I can’t wait to try it.  I think I’ll just use butter, though.  Gotta make a recipe your own.
